Interview with Antonella Orazi, owner of the restaurant Da Giustina at Sirolo.
How and when was born the restaurant?
The restaurant ‘Da Giustina’ was born in the 80s on the initiative of my mother, from which it takes its name. Initially it was a small rest stop for tourists going to the beach of San Michele. Afterwards the restaurant, with the increasing tourism in the Conero Riviera, has expanded, moving into a larger location today, in the Conero Regional Park, just outside of Sirolo.
What are the main features of the restaurant?
The secret of our work is surely to have continued the path taken by our mother Giustina, which served its clients only fresh fish cooked with healthy and simple recipes. Ours is a family management and this puts us in a very intimate relationship with the customer. Quality of the ingredients is very important for us: from garden vegetables to fish purchased directly from local fishermen, nothing is left to chance.
What are the characteristics of your cookery?
Our dishes follow the ingredients seasonality and are meant to provide customers with the aromas and flavors of a traditional home cooking, simple and tasty.
Some of our best dishes are the raguse stew, handmade gnocchi with shrimp and the grilled fish. For those who love meat, the rabbit "Grandma Rose" will surely delight you.
